PUMPKIN CHEESECAKE STREUSEL BARS
| Makes: 1 8×8 Pan |
Ingredients:
- 1 and 1/2 cups (~10-11 full sheets) cinnamon graham cracker crumbs
- 1/4 cup white sugar
- 1 tablespoon brown sugar
- 6 tablespoons butter, melted
- 2 packages (8 ounces each) full fat cream cheese, at room temperature
- 1/2 cup + 2 tablespoons white sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup + 2 tablespoons canned pumpkin (not pumpkin pie filling, not entire can)
- 1/2 teaspoon cinnamon
- 1 teaspoon pumpkin pie spice
- 1/2 cup brown sugar, packed
- 1/2 cup white flour
- 1/4 cup quick cooking oats
- 1/4 teaspoon cinnamon
- 1/4 cup butter, softened (not melted)

PUMPKIN S’MORES DOUGHNUTS
| Makes: 12 serving |
Ingredients:
- For the Doughnuts
- 1 15oz (1¾ cup) can of pure pumpkin puree
- ½ cup vegetable oil
- 3 large eggs
- 1½ cups granulated sugar
- ¾ teaspoon ground cinnamon
- ½ teaspoon ground nutmeg

Ingredients:
- 18 graham cracker sheets
- 1/2 cup butter, softened
- 1 box yellow cake mix (dry mix, not including the other ingredients)
- 15 ounce can pumpkin puree (NOT pumpkin pie filling)
- approximately 3/4 cup marshmallow cream
- 1 cup milk chocolate chips OR chocolate baking melts
- 1.5 ounces of heavy cream OR 1/2 cup Cool Whip

PUMPKIN SPICE TRUFFLES
| Makes: 4 servings |
Ingredients:
- 2 ounces (55g) full-fat cream cheese, softened to room temperature
- 2 Tablespoons (15g) confectioners’ sugar
- 1/3 cup (72g) pumpkin puree
- 1 and 3/4 cups (175g) graham cracker crumbs (about 12 full sheet graham crackers)
- 1/2 teaspoon pumpkin pie spice1
- 1/2 teaspoon ground cinnamon
- 4 ounces (113g) white chocolate, coarsely chopped and melted
Topping
- 10 ounces (283g) semi-sweet or white chocolate, coarsely chopped
